Tutti Fruiti Slice
This scrummy slice is my go to for short notice slice. It's chewy, full of flavour and a one bowl wonder. It can be made with ingredients you have lying around - I tend to have a container full of fruit mix in amongst my baking supplies - which is even better for those times you want something a little different, but that still tastes great!
I usually get requests to make this for the boys when they go on boat trips as it's filling and lasts a few days - and last week was no different. I made this on Thursday night last week and boxed it up for the weekends fishing trip on Friday.
The recipe comes from a good friend's mum, and has been a favourite in our house for a few years now.
I have added white chocolate to the recipe over the years when I have it on hand. I usually just get a cup or so of white chocolate buttons and chop them up and throw them in, just for a little bit extra in the mix.
The mix is quite thick so you do need to get your hands dirty on this one and get in there to mix it all up and combine all the ingredients. You will also need to involve your hands again when it comes to pressing it into the baking tin.
I bake this in a standard size roasting dish that I have lying about. I line the dish with baking paper to save myself time - and make it easy to pull the whole slice out in one slab once it's cooled down. This time round it came out of the oven quite light - usually it's a deep brown colour. May just be the change of oven - didn't change the taste and chewiness at all!
You end up with a delicious slice that makes about 24 decent sized 2-3cm thick square pieces. I usually pull it out of the oven and leave it overnight to cool down before cutting it up and popping it into an airtight container. Only one piece survived the weekend - and it was still tasty and fresh 3 days after being baked!

Recipe:
Tutti Fruiti Slice
225g butter
340g sugar
2 eggs
2 cups fruit mix
225g plain flour
1 tsp baking powder
2 cups dessicated coconut
Optional - 1 cup white chocolate buttons (chopped) or similar
Cream butter and sugar. Add egg, flour, fruit and coconut.
Press into swiss roll tin and bake 160ΛC for 30 minutes or until golden. Watch not to overcook as it will get drier and harder.
